What happens when a brewery and a pizzeria join forces?
A lot of good things, and a few too many slices.
Crónicas on Isla Holbox is one of three spots around Mexico, with the beer originally coming from Guadalajara. The pizza side of this marriage is all about wood-burning ovens and bold flavours, and on this tiny tropical island, they’re known for one thing: shrimp and lobster pizza. Yep, seafood pizza. It’s not exactly a global trend, but on Holbox, it’s a must.
Sure, they’ve got the classics, but let’s be honest, you came here for the seafood.


Lobster Pizza:
Picture a Margherita that won the lottery. Tomato sauce, fresh mozzarella, and big, unapologetic chunks of lobster covering the whole pie. No skimping here. It’s wood-fired, bubbling, and absolutely over the top, in the best way.
Shrimp Pizza:
This one’s the lobster pizza’s lighter, sassier cousin. Pesto base, crumbly feta, and juicy shrimp scattered across the top. Because the feta doesn’t melt everywhere, it feels tidier, and the flavours are a little more balanced.
Verdict:
Two pizzas for two people? Ambitious. Especially when you add beer. The crust is thin and tasty, but a little floppy, so expect the odd shrimp to make a run for it. The lobster was a bit tougher than we hoped, probably from the oven’s heat, but still tasty. If we had to pick, the shrimp pizza wins. The feta and pesto just worked, while the mozzarella on the lobster pie made things a touch too rich.
Even if seafood pizza sounds wrong on paper, trust me, it’s actually so right. It’s lighter than anything meaty, just maybe go easy on the cheese.


The Beer:
Holbox may be tiny, but Guadalajara’s beer scene travels well. There’s a solid lineup here: light, dark, fruity, hoppy. You name it. Perfect for washing down a slice (or four).
The Vibe:
This place could easily exist in any cool coastal town. Trendy but laid-back, minimalist but warm, with music that’s all over the map from Mexican hits to classic rock. It’s the kind of spot you wander into for a beer and end up staying for another pizza you definitely don’t need but order anyway.
