TACO NIGHT: Pickled Onions, Spicy Sour Cream, Homemade Salsa, Fresh Tortillas

FLOUR TORTILLAS

Prep time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes

Ingredients:

  • 2½ cups all purpose white flour
  • 1 tsp salt
  • 1½ tsp baking powder
  • 3 tbsp vegetable oil
  • ¾ cup + 1 tbsp warm water

Directions:

  1. In a large bowl mix the flour, salt, baking powder and vegetable oil. Mix with fingers until the oil is evenly distributed.
  2. Add in the water and mix thoroughly until the flour mixture is fully combined and forms into a dough
  3. Knead dough for a few minutes and let rest under a damp kitchen towel for 10 minutes
  4. Divide dough into 16 even pieces (35g), roll pieces into balls then flatten with your palm. With a rolling pin (or wine bottle) roll out dough into circular shapes as thin as possible without tearing the dough
  5. In a hot cast iron pan, cook the dough for 30 seconds on each side, keep warm in a tortilla warmer or folded towel

PICKLED ONIONS

Total Time: 10 minutes
Store overnight

Ingredients:

  • 1 red onion halved and thinly sliced
  • ½ cup apple cider vinegar
  • 1 cup hot water
  • 1 tbsp sugar
  • 1½ tsp salt

Directions:

  1. In a bowl add the apple cider vinegar, hot water, sugar and salt. Mix until sugar and salt is fully dissolved. 
  2. In a mason jar add onions and pour over liquid. Let sit for 1 hour then seal jar and store overnight or for a few hours before serving

Notes:

  • If there’s not enough liquid to fully cover the onions, scale up the mixture and add more liquid.
  • Serve with tacos, nachos, burritos, sandwich or charcuterie board

HOMEMADE SALSA

Total Time: 10 minutes

Ingredients:

  • 1 can (796ml) diced tomatoes drained
  • ¾ cups roughly chopped onion
  • 1 jalapeno roughly chopped (deseeded if too spicy)
  • 1 tbsp chopped garlic
  • 4 tbsp lime juice
  • ¾ cup cilantro
  • 1 tsp cumin
  • Salt to taste

Directions:

  1. In a blender or food processor add all of the ingredients and pulse until all of the ingredients are chopped and evenly mixed while still allowing the ingredients to be chunky.

Notes:

  • Always taste your jalapenos before using them as spice level varies from chili to chili. Use less jalapeno and/or remove the seeds to the desired heat level.

SPICY SOUR CREAM SAUCE

Total Time: 5 minutes

Ingredients:

  • ½ cup sour cream
  • 1 tbsp Taco Seasoning
  • 1½ tbsp lime juice
  • 1 tsp finely chopped or pressed garlic
  • 1 tsp hot sauce or to taste

Directions:

  1. Add all of the ingredients in a bowl and thoroughly mix until all the ingredients are combined
  2. Serve over your favourite tacos or burritos

Notes:

  • Substitute sour cream with plain greek yogurt for healthy alternative
