After a jaunt through the Middle East and North Africa, Andrea returned with a mission to start making her own hummus. It’s surprisingly easy to make as long as you have a good blender or food processor, and it’s a lot healthier than the store bought hummus as you can control the amount of salt, and other naughty things!
Ingredients:
- 1 Can (540ml) chickpeas, drained
- 2 tbsp tahini
- 4 tbsp olive oil
- 6 tbsp lemon juice
- 2 tbsp cumin
- 2 tbsp garlic
- 2 tbsp or to taste sriracha (or a hot sauce of your choice)
- Handful cilantro (or parsley)
Directions:
- In a large bowl add and mix the chickpeas, tahini, olive oil, lemon juice, cumin, garlic, hot sauce and fresh herbs.
- Pour the entire contents of the bowl into your blender or food processor and pulse for two minutes, or until smooth.
- Enjoy for up to a week with crackers and vegetables.
Note:
- There are a number of substitutes and additional ingredients that you can add to the mix. Spicing things up with curry powder, sun dried tomatoes, caramelized onions, roasted garlic or any other ingredient that might be to your taste.
